You’ll Need

  • 10 oz frozen spinach, thawed

  • 2 TBS butter

  • ½ finely chopped onion

  • 1 clove garlic, finely minced or ¼ tsp garlic powder

  • 1 cup heavy whipping cream

  • 1 cup shredded Parmesan cheese

  • 4 oz (½ block) cream cheese, cubed

  • ¼ tsp black pepper

  • ¼ tsp nutmeg

  • ¼ tsp Italian seasoning, opt

  • ½ tsp Old Bay seasoning, opt

Directions

  • Step 1: Saute onion in butter until translucent. Add garlic and saute 2 minutes more.
  • Step 2: While the onion is cooking, squeeze the water out of the spinach. Drain through a sieve until it’s time to add it in step 4.
  • Step 3: Add cream, cream cheese, and Parmesan cheese, and spices. Stir until the cream cheese is melted.
  • Step 4: Add the spinach and stir. Cook until heated through. Test for seasoning adjustments. Top with extra Parmesan and nutmeg if desired.

  • Leftovers put in the fridge will thicken up. You can spoon it in celery stalks. Or spread on tortillas and roll up. Slice them and serve as pinwheels.
