Serves 4-6
These were featured on a recipe card I had in my farmstand. It’s the favorite recipe I’ve ever tried. Not that I won’t eat any fried green tomatoes 😆

You’ll Need:
3 medium unripe green tomatoes, sliced in ⅓” slices
1 large egg, slightly beaten
½ c buttermilk ( or ½ tbs vinegar then add milk to ½ cup)
½ c flour, divided
½ cup cornmeal
1 tsp salt OR 1 tsp Cajun seasoning ( if using Cajun, omit black pepper)
½ tsp black pepper
oil for frying
Step 1: Mix egg and buttermilk. Put ¼ cup of the flour in a shallow dish. Now mix the other half of flour with the cornmeal and seasonings in another shallow dish.
Step 2: Heat oil to around 375 º.
Step 3: Dip the tomato slices in plain flour. Then dip into the milk. Let the extra milk drain back into the milk bowl.
Now dip the slices in the cornmeal and flour mix.
Step 4: Place a few slices in the pan at a time but don’t overcrowd them. Fry about two minutes each side or until browned to your liking.
Step 5: Remove to a cookie rack to drain. Sprinkle with a tad more salt or Cajun seasoning while still hot.
KellRae’s Kitchen Tips: Medium size tomatoes are easier to work with and stay more firm then large ones.
If you pick tomatoes that are starting to ripen they won’t have that tart taste and will be softer when fried. Be sure and get firm, unripe green tomatoes.
Also, draining on a cookie rack keeps them from being so soggy. Put it on top of a pan lined with paper towels.
If your oil isn’t hot enough when you start or you overcrowd them in the pan, you’ll end up with soggy, greasy maters.
