You’ll Need

  • 2 ½ cups all purpose flour, sifted

  • 1 tsp baking soda

  • 1 tsp salt

  • 1 tsp baking powder

  • 2 cups sugar

  • 2 eggs

  • 1 ½ cups vegetable oil

  • 2 tsp vanilla extract

  • 1 cup chopped pecans

  • 3 cups peeled and cored, chopped apples

Directions

  • Preheat oven to 350°F. Grease and flour a tube pan.
  • Sift together the flour, salt, soda and baking powder.
  • Combine sugar, eggs, oil and vanilla. Beat thoroughly.
  • Add the flour mixture to the oil mixture in small amounts and beat in between each addition. The batter will be very stiff. If you’re using a mixer, you might need to finish stirring by hand.
  • When the batter is mixed, add in the pecans and apples and mix until combined again.
  • Pour the batter into the greased and floured pan and bake for an hour or until a toothpick poked in comes out clean.
  • Cool in the pan for 15 minutes. Run a knife around the center and outside edge. Cool another 10 minutes and remove from the pan.
