Candied Turnips

I remember my Nanny making this and she called it creamed turnips.

My kids always ate it until one started school and a friend called veggies gross. Candied Turnips were invented and viola. No more grossness.

My Nanny peeled her turnips. Memaw Mae peels her turnips. I do not peel my turnips.

I stand by the philosophy that if my household will eat it with the peelings, the peelings stay on the veggie or fruit.

I honestly used to just add butter until my arteries screamed and sugar until my teeth ached. I figured that was enough. Sometimes I switch it up and use honey.

Then I married a diabetic. I cut back the sugar. I’m not sure how much I cut back because I’ve never measured it before I wanted to write it down.

Now I make it just sweet enough to get the turnip taste out but not super sweet. I let everyone else add more to their plates or I drizzle it with honey.

I use a homemade version of Swerve for it now. Ssshhh… don’t tell hubby. I only tell him if he needs to reduce his insulin bolis. Or when I want him to swear it tastes different 🤣 🙄

You’ll Need:

4 turnips, chopped

⅓ c plus 2 TBS butter

½ c sugar

1 tsp salt

Cover the turnips with an inch or two of water. Bring to a boil and cook until very tender.

Drain the water and put the turnips back in the pot. Add the other ingredients and mash until it’s the consistency you like. I use a hand masher.
