Yellow Squash Casserole

You’ll Need

  • 2lbs (about 7 c.) yellow squash, sliced

  • 1 c water

  • 2 small onions, chopped fine

  • 2 TBS butter, melted

  • 1 cup round buttery cracker crumbs, divided

  • 1 ½ c (6 oz) shredded cheddar cheese

  • 2 eggs, beaten

  • ¼ tsp salt

  • ¼ tsp black pepper

Directions

  • Preheat oven to 350°. Combine squash and water in a pan and bring to a boil. Reduce heat, cover, and simmer for about 10 minutes or until very tender. Drain well and mash.
  • Sautee’ onion in butter until tender. Mix squash, ¾ c cracker crumbs, and remaining ingredients in with the onions.
  • Pour into a greased 2 qt casserole dish and top with the remaining cracker crumbs. Bake 45 minutes.

KellRae’s Kitchen Tips

  • Use a stovetop and oven safe dish to boil the squash, cook the onions, and then bake in to save cleanup.

    I’ve used squash I’ve canned and frozen squash in this recipe.
