Rooster and Rice from a Crawfish Boil

We always have home canned chicken on the shelf and that’s what I’ve used in this.

This isn’t so much a recipe as a guide for how I do it. My son and I were in the grocery store buying things for a crawfish boil and I had the idea of putting some boil-in-bag rice in it. 

The first time we tried it, it was good. Everyone liked it.

The next time we cooked it, I added butter, a bit of Italian seasoning and a pint jar of chopped, cooked chicken. THAT was the key. Butter. The other stuff is good in it, too.

So, here’s what we do:

We decide how many of the bags of rice we need depending on how many people are coming. My son puts the bags of rice in the seasoned, boiling water and then adds the other things that take a bit of time to cook. He takes the bags out around the 20-25 minute mark.

I cut the bags open (very carefully, they’re super hot) and dump the rice in a bowl. Make sure the bowl is big enough for mixing it up. I add a stick of butter for every 2-3 bags of rice. I add the Italian seasoning to taste and add the chicken. I mix it until the butter is melted and everything is mixed pretty well. 

I’ve made it without the Italian seasoning and it’s still very good. The key is really the butter. 2-3 bags of rice is A LOT. We always have some left over, which is fine with me. It’s even better the next day.

However spicy your crawfish seasoning is will determine how spicy the rice is. We’ve done this in a shrimp and crab boil, too. 

You can do this on the stovetop with the corn and potatoes if it’s not crawfish season. Just add whatever you normally put in your crawfish or shrimp boiling pot.

If y’all are interested, I’ll ask my son and nephew how they cook the crawfish. They do it differently but they are both good.
