Some people in my family turn their nose up at creamed spinach. So, I call this spinach dip and they eat it.

We used to have a family who would bring creamed spinach to church lunches. My kids and I loved it but the ladies wouldn’t give out the recipe.It wasn’t a big deal because we had lunch after church every Sunday and we’d get it every month or so.
Well, we started attending church closer to home when we moved. I had to look for a recipe.
I’ve tinkered with a basic recipe I found and this is the current one I ( loosely) follow. The original recipe called for less cream and more spinach. And only the nutmeg with no other seasonings.
I find this has enough salt for me without adding any, but you can add some if you like. Also, I don’t always add the Italian seasoning or Old Bay seasoning.
I tried Cajun seasoning but it made it a little salty for me. My son really liked it, though.
Make it once and then you can adjust the seasonings to your liking before or after adding the spinach.
It’s good the next day stuffed in celery or rolled in tortillas and cut as pinwheels. I should try it as a spinach enchilada filling. Or, you can and let me know how it turns out π π

You’ll Need:
10 oz frozen spinach, thawed
2 TBS butter
Β½ finely chopped onion
1 clove garlic, finely minced or ΒΌ tsp garlic powder
1 cup heavy whipping cream
1 cup shredded Parmesan cheese
4 oz (Β½ block) cream cheese, cubed
ΒΌ tsp black pepper
ΒΌ tsp nutmeg
ΒΌ tsp Italian seasoning, opt
Β½ tsp Old Bay seasoning, opt
Step 1: Saute onion in butter until translucent. Add garlic and saute 2 minutes more.
Step 2: While the onion is cooking, squeeze the water out of the spinach. Drain through a sieve until it’s time to add it in step 4.
Step 3: Add cream, cream cheese, Parmesan cheese, and spices. Stir until the cream cheese is melted.
Step 4: Add the spinach and stir. Cook until heated through. Test for seasoning adjustments. Top with extra Parmesan and nutmeg if desired.
KellRae’s Kitchen Tips: Leftovers in the fridge will thicken up. You can spoon it in celery stalks. Or spread on tortillas and roll up. Slice them and serve as pinwheels.
