This is currently my favorite version of red enchilada sauce.

When I use this over beef enchiladas, I like to add a little bit of the cooked ground beef in the sauce.
I also use this over cheese enchiladas.
You’ll Need:
3 TBS oil
1/4 c flour
½ tsp pepper
½-1 tsp salt
1 ½ tsp garlic
2 tsp cumin
½ tsp oregano
2 TBS Chili powder
2 cup broth or water
Step 1: Brown flour in oil a few minutes to get the raw taste from the flour
Step 2: Add broth and simmer until thick.
KellRae’s Kitchen Tips: You can omit the oil and blend the rest in the blender. Pour over enchiladas and bake like normal.
